Sara's Coconut and Flax Seed MuffinsA Chapter by Sara Mercury
These muffins are great if you need a little dietary fibre to help keep you regular. (Bear in mind that coconut is a natural laxative.) The results may take a day or two, depending upon your body's unique food processing ability. This recipe does not call for any added oil or fats, except those good Omega 3's found naturally in the flax seed. A small amount of saturated fat is found naturally in coconut, but there is no cholesterol.
What you will need: 2 cups self-raising flour 1 cup Egg Beaters® brand egg substitute 2 tbsp ground flax seed (a healthy alternative to oil or shortening) 1/4 cup shredded coconut 3/4 cup sugar (or Stevia in the Raw® brand sugar substitute) 1 tbsp vanilla flavouring/extract 3/4 cup unsweetened apple sauce 1 tsp ground cinnamon 1/2 tsp ground cloves 1/2 tsp ginger 1/2 cup raisins or other plums (if desired)
Directions: Beat sugar and eggs together, then add all
other ingredients and mix well. Pour into muffin pan and bake in oven on 350
degrees F until light brown (about 15 " 20 minutes). Serve with butter and/or jam at breakfast .... or do like me and eat one plain as a healthy snack between meals, as a substitute for grain or bread in a meal, or as a tasty dessert after dinner.
