Sara's Creamy Fruit Salad

This recipe was created by accident, when I realised that the white grapes I had purchased looked better than they tasted. I had dinner guests waiting and I didn't know what to do! I wasn't about to serve them bitter grapes and I didn't have time to run out and buy more. So, I used my creativity, along with some odds and ends I had on hand in the fridge and came up with something quite delightful that went over very well.

 

If you ever end up with sour grapes, this is one way to remedy the situation when you're in a bind.

 

Ingredients:

 

1 cup shredded, sweetened coconut

½ cup Stevia in the Raw®

1 cup raisins

1 cup white grapes (halved)

2 medium red apples (cored and finely diced)

2 ½ cups unsweetened almond milk

¼ cup fat-free half-n-half

3 tbsp cornstarch

½ cup Egg Beaters®

1 tbsp cinnamon

2 tsp nutmeg

1 tsp ginger

1 orange (halved and thinly sliced)

 

Directions:

 

In a large bowl, combine raisins, apples, coconut and grapes and set aside.

 

In small saucepan, combine Egg Beaters®, cornstarch, fat-free half-n-half, almond milk, Stevia in the Raw® and spices together until cornstarch is thoroughly stirred-in (with no lumps); heat on low until bubbly and thickened, stirring constantly to keep from scalding at the bottom. Set aside to cool. When cooled, stir into the finely diced apples, raisins and white grapes. Chill for one hour. Spoon into dessert saucers, garnished with sliced oranges.
