No-Bake Ginger Spice Cream Pie

A Chapter by Sara Mercury

Just a little something I made up on my own using a favourite 'American pudding' mix!

I don't usually like to get ready-made stuff from the market, but in this case, things like Jello brand pudding mixes and ready-made graham cracker crusts really do serve as a time saver! This no-bake pie is very easy to prepare and is very delicious. Its flavour is a bit reminiscent of chai spice or pumpkin pie. In fact, I'm serving it for the first time to my dinner guests this evening!

Ingredients:

graham cracker crust (ready-made)
large size, vanilla-flavoured, instant Jello Pudding mix (sugar-free, fat-free)
2 1/2 cups of fat-free milk (can't use almond milk or soy milk or pudding won't set)
1/4 tsp cardamom
1 tsp nutmeg
1 tsp cinnamon
1 tsp ginger
1/2 tsp ground cloves
Cool Whip, non-dairy whipped topping (fat-free)
Coloured sugar sprinkles (optional)

Directions:

Fold 2 1/2 cups of skim milk into Jello instant pudding powder and mix until pudding sets. Add in spices until thoroughly blended. Pour spiced pudding mixture into 9" graham cracker crust. Top with the entire package of whipped topping. Garnish with the sugar sprinkles, or a sprinkle of cinnamon if desired. Chill for five hours and serve.

Be careful of sugar-free products out on the market. Aspartame and saccharin, as well as sucralose (Splenda) is not good for you in large quantities, and may even be harmful in small quantities.
