Egg Toast Sara Mercury-StyleA Chapter by Sara MercuryA guilt-free, sugar-free version of the real thingIf you love egg toast and are watching your waistline, here's the recipe I enjoy on mornings when I either run or do my other cardio exercises. Egg Toast combines whole grain, wheat bread (whole grains = good carbs) with a very healthy dose of protein found in Egg Beaters (that stuff without the yolks = bad cholesterol) that helps your body recover from a hard workout. INGREDIENTS: 3 slices of Pepperidge Farm Thin Whole Wheat bread 6 tbsp Egg Beaters 1 tbsp Truvia (no calorie sweetener) 1/2 tsp vanilla extract 1/2 tsp ground cinnamon 1/2 tsp ground cloves 1/2 tsp ground nutmeg 1/2 tsp ground ginger 1/2 tsp ground allspice Combine Egg Beaters with vanilla extract; mix well and pour over the bread slices in a shallow dish. Let the bread and egg mixture stand covered overnight in the refrigerator until all the egg mixture is absorbed into the bread. In a skillet or chef's pan on the hob set at medium heat, spray the skillet with a non-stick cooking spray and put the egg toast on to cook. Brown both sides, then remove from the skillet and onto a plate. Combine the spices and the Truvia in a shaker and dust the egg toast generously with the spices. Sit down with a cuppa and enjoy to your l'il heart's content! Calories: 155 And if you've worked out like me beforehand, you've already worked OFF more calories than you will get from this serving of egg toast!
