Plum Cake for One

This cake is made with whole wheat flour, apples and plums, and is a great way to not only get your whole grains in a meal, but it will allow you to enjoy the taste of the Holidays without the guilt.

Ingredients:

1/4 c. whole wheat flour
1/2 c. Egg Beaters
1/4 tbsp baking powder
1/2 small apple, cored and finely diced
1/4 cup finely diced plums
1/2 tbsp ground cinnamon
1/4 tbsp ground ginger
1/4 tbsp ground cloves
1/4 tbsp ground allspice
1/4 tbsp ground nutmeg
1/2 tbsp cooking oil
1/3 tbsp milled flax seed
1 c. Splenda

Combine liquid ingredients together, then add the solid ingredients and mix well. Pour into small loaf pan and bake at 350 degrees for about 30 to 40 minutes until done.

Total calories per loaf: about 340.

This will be the recipe that I will carry out when I wake up, soon I think. This is a great feel-good recipe that uses the goodness of spices and the natural mild sweetness and pungency of plum, apple and cinnamon to flavour.
