Low-Fat Cereal and Fruit Crepes

More and more, I am turning to whole foods as a source of nutrition and forgetting about overly processed foods. Why? Because whole foods tend to give your body more of what it needs without all the bulk.

 

Have you ever been dieting, fill your tummy up with all that low-calorie food, felt like a blimp, and were STILL HUNGRY? Well, you're not alone there. As a matter of fact, now that I've reached my weight goal, I find this to be all the more true of myself. Eating low-calorie food in bulk to feel full isn't always the best thing, especially if the low-calorie food also cuts out the nutritional value of a whole food. What's even more alarming is that some of the food out there that is so-called 'diet' can actually be a detriment to controlling hunger and weight gain for the simple fact that it may contain hidden sugars and carbs that tell the body to store the fat you're trying so hard to lose. So, if you find that you're eating a few extra servings of something that's supposed to be a diet food, you might wish to check the nutrition facts and find out why! It may not be your fault! High carbs and sugar, especially high fructose corn syrup can actually stimulate your appetite and have you going back for more … the very thing that people striving for weight control want to avoid!


The companies that make these foods are laughing all the way to the bank, Folks!

 

However, I still use Egg Beaters, because I must control the calories I take in every day. But I have started eating whole eggs sparingly so as to get the full benefit of the real thing from time to time. Surprisingly, I find that eating one whole egg satisfies my hunger longer than a half a cup of the Egg Beaters! The only drawback to eating only one whole egg, though, is the protein content. I'd still have to eat two whole eggs to equal the same protein as the half cup of the Egg Beaters.

 

Well, on to the recipe I want to share with you. I made this very crepe this morning as part of my breakfast, and it was nothing short of delicious and very filling! It is not sweet; on the contrary. I only put a small amount of steevia extract in it (yes, it's a natural non-calorie sweetener, unlike Splenda), and it doesn’t make anything taste like syrup. Too much sweetener would spoil this recipe, I think, because it would not allow the natural flavours of the fruit to shine through.

 

Ingredients:

¼ c. self-raising flour

3 prunes, finely cut

½ of a small apple, finely diced (with peel)

½ c. Egg Beaters

4 tsp. stevia natural no-calorie sweetener (optional)

¼ c. Uncle Sam breakfast cereal

about 2 tbsp water (to thin batter out if it gets too thick)

1 tsp cinnamon

 

Mix all ingredients together until well blended; divide into half and pour onto a hot non-stick griddle or fry pan set at medium heat. Reduce heat to medium-low and cook until holes begin to form on the side facing up. Flip crepe to the other side and cook until golden brown on both sides.

 

This is a perfect breakfast food for those who require a balance of protein and carbohydrates to begin their day. The entire recipe contains precisely 315 calories if prepared as directed hereinabove and eaten PLAIN. (Note: If two whole eggs are used in the place of the Egg Beaters, add 80 calories to the recipe.)

 

Toss a couple of veggie sausages on your plate and you have a very healthy, balanced breakfast sliding in at just under 400 calories … made for an athlete!

 

Even more worthy of note, Uncle Sam cereal is ideal for those who wish to balance out their carbohydrates with protein and get plenty of fibre in their diet. The protein, fibre, low-fat and low sugar content of the cereal, coupled with the fact that it is organic and minimally processed makes it one of the best cereals on the U.S. market as far as whole foods and nutrition goes. Kashi comes close, but even Kashi falls short of the nutritional value of Uncle Sam! Check it out for yourself!
