This sandwich is perfect for those on a serious low-carb, low-fat, low-calorie, high protein diet. It is totally delicious, yet easy enough to prepare alongside the regular, more fattening version of the Sloppy Joes you'll be preparing for the rest of your family.

What you will need to purchase or have on-hand:


Non-stick, zero-calorie cooking spray

La Banderita (brand) Soft Taco Low-Carb Tortillas


Morning Star Farms (brand) Meal Starters (TM) Grillers (brand) Recipe Crumbles *(veggie crumbles)


Heinz (brand) Reduced-Sugar Tomato Ketchup


PictSweet (brand) Seasoning Blend **(frozen seasoning trinity: chopped bell pepper, celery and onion)


Kraft Singles (fat-free) (sharp cheddar flavour)


chilli powder


garlic powder



Ingredients:

2/3 c. veggie crumbles*
1 low-carb tortilla
2 tbsp chopped, frozen seasoning trinity**
1 tbsp catsup
1 slice fat-free cheese
2 tsp garlic powder
1 tsp chilli powder

Directions:

In a medium to small microwavable bowl, combine veggie crumbles, spices and the frozen seasoning trinity and microwave on HIGH power for about 2 1/2 to 3 minutes, or until crumbles are hot and the vegetables are cooked, but not dried out. Add catsup and mix well. Set aside.

On a prep plate, place tortilla flat and place the slice of cheese on the tortilla near the middle bottom and away from the sides. Carefully pour the veggie crumble mixture over the cheese, keeping all ingredients well away from the side edge of the tortilla. Fold the tortilla inward along the side edge and pull the bottom up, rolling the stuffed tortilla away from you. Be careful to keep contents inside the tortilla while rolling.

Spray a skillet with cooking spray and heat on medium heat. Place rolled sandwich on hot skillet. Use a smaller lid on top of the sandwich while cooking to ensure that the heat is kept inside the sandwich and the cheese is melted. Brown on all sides very carefully, then remove from heat and enjoy!
