Non-Dairy Carrot Smoothie

This recipe I've tested in my own kitchen (as all my recipes). It is wholesome as well as delicious. It's perfect for those who don't like to eat their veggies. If you like pumpkin pie but hate carrots, here's a perfect way to get the goodness of carrots (rich in Vitamin A, C and B) in your diet without adding to the luxury of your waistline or grossing yourself out! (lol)

Ingredients:

18 medium-sized, baby carrots (freshly cooked, not frozen or tinned)
1/4 c. water
3/4 c. granulated Splenda
1/4 tsp ground cinnamon
1/8 tsp ground cloves
1/8 tsp ground ginger
1 drop orange essence (or orange extract)
1 tbsp Coffeemate (brand) Sugar-free French vanilla creamer*** (OR as the more healthy alternative: 2 tbsp non-fat, dry milk with 1/2 tsp vanilla flavouring - organic, if you can find it and it actually exists!)

Directions:

In a 2-cup sized, glass measuring cup (or small mixing bowl of the same size), combine Truvia (or Stevia in the Raw), orange essence or extract, spices and creamer until smooth (mixture will be thick and sticky). In a blender or Cuisinart, put in cooked carrots and water and blend until pureed. Add pureed carrots to the Truvia-creamer-spice mixture and blend well. Put in covered container and refrigerate for about three hours. Serve chilled. Serves one. Contains 90 calories.

To serve more people, or for a double serving, simply double or triple the recipe as needed.

This recipe is also ideal for those parents who can't get their little ones to eat their carrots at dinnertime! (If you wish to use sugar in place of Truvia (or Stevia in the Raw), though, be prepared for hyper kiddies, as this recipe is very sweet!  lol)

*** The non-dairy creamer powder is NOT a whole food and I do not recommend it to be consumed, EXCEPT by those individuals who must restrict their intake of calcium for health reasons; i.e., hyper-parathyroidism.

Substitute that coffeemate with the real deal (dry milk) or fat-free half-n-half, Folks. Coffeemate is NOT REAL FOOD and is bad for your gallbladder. However, you may consider using the Coffeemate as an alternative to dairy if you are either allergic, or have hyperparathyroidism, or constipation problems due to your body's inability to break dairy down properly.
