Chocolate Fruit CrepeA Chapter by Sara MercuryThe perfect, healthy, high-protein, decadent breakfast or evening dessert!
This is a very filling dessert for the evening, or else a healthy way to start your day at breakfast.
Ingredients: *2 tablespoons organic cocoa (unsweetened) (antioxidant source, flavour additive and thickener) *about 8 to 10 packets (or to taste) of Truvia no-calorie sweetener (or 1 tbsp organic honey if you're not fearful of calories) *1/4 cup unsweetened, diced, dried figs (carbohydrate and fibre source) *2 tbsp ground almonds -OR- 1 tbsp milled flaxseed (for source of Omega-3's) (do not use both ingredients or the batter will be too thick!) *1/2 cup Egg Beaters (or 2 to 3 egg whites, if preferred) (protein source) 2 tbsp powdered skim milk or whey powder (for added protein) Mix all ingredients together and let batter stand until thickened slightly. Then pour into lightly oiled skillet and brown on both sides slowly as you would a pancake. Let cool. Sprinkle with coconut or cinnamon if desired for added flavour and enjoy! © 2012 Sara Mercury |
