STIR FRIED VEGETABLES original recipe no#1 by ALIENBABA

STIRFRIEDVEGETABLES STAGE 2 ALIENBABA.JPGSTIRFRIEDVEGETABLES STAGE1 ALIENBABA.JPGSTIRFRIEDVEGETABLES STAGE3 ALIENBABA.JPG   I started out to make vegetable-tikka…but I didn’t have coal, a grill nor those skewers. ..So then I found a thick curved pan…and some vegetables… Stir-fried-vegetables: Time taken for preparation 20 minutes. Ingredients: 2 tablespoons cooking edible oil (or a tablespoon butter/ghee), 1 Maggie cube (or a pinch of garam-masala(mix of crushed turmeric, chili, garlic, cinnamon, and other hot spices) and a pinch of salt), 2 okra (ladyfingers), 1 capsicum, half onion, 2 tomatoes, palm-full of green coriander fresh leaves,  quarter cucumber, a pinch of ginger paste and garlic paste. Make onion rings and fry in a half tea spoonful of oil till they turn light-brown in the pan over slow flame. Cut/dice remaining vegetables into 1 inch cubes and fry in a pan with oil on a slow flame for 10 minutes….constantly turning the chunks over with a metal spatula. Only add the Maggie/salt after the fire has been turned off. Mix the vegetables nicely…the tomatoes will ooze some juice which will add taste to the preparation. Save a little green coriander to sprinkle over the vegetables as a garnish after they have been cooked and after the stirring is completed. This gives a nice tasty look to the dish. Suggestion: This dish can be served along with boiled rice or some roti, chappati, naan or bread- loaf or standalone…also an excellent side dish to kanji (boiled-rice gruel) with dry-curry.
