Tuscan Meat loaf topped with Chilled Tomatoes

Welcome to Meat loaf Mania topped in fresh chilled tomatoes



You’ll need:

4 fresh scallions diced

½ cup of fresh spinach chopped fine

4 fresh mushrooms caps diced

6 slices of bacon ( 2 slices cooked and
crumbled & 4 left raw and whole )

1 egg

1 pound ground beef thawed

1 pound ground sausage thawed

1 teaspoon of salt

1 teaspoon of Tuscan rosemary
& sun-dried tomato

1 teaspoon of Sicilian crushed
red pepper & garlic



In a large mixing bowl cut up 4 scallions, ½ cup of fresh spinach cut fine, dice 4 fresh mushrooms diced, cut
up 2 slices of cook bacon, add 1 teaspoon of salt, 1 teaspoon of Tuscan rosemary & sun-dried tomato and 1 teaspoon of Sicilian crushed red pepper & garlic (by McCormick) and 1 egg; mix together add 1 pond of ground beef and 1 pond of pork sausage without sage, completely mix together. Lay uncooked bacon across the pan then press the meat loaf mixture into casserole dish andfinish laying the bacon across your meat loaf. Cook at 350 degrees for 1 hour,at the 40 minute mark drain off all the fat from your meat loaf. Lightlydrizzle a sweet BBQ sauce over the meat loaf and finish cooking.



Meanwhile, take a large ripe tomato peel most of the skin off of it. I like to take my potato peeler and starting at the top I remove the skin all the way around, skipping a space as I go. Which will end up leaving half of the skin on the tomato then dice up in small pieces, lightly salt and then season with the McCormick Tuscan seasoning and chill the tomatoes until the meat loaf is cooked. Once you’re ready to serve place a slice of your Tuscan meat loaf on your plate and cover it with a generous
portion of chilled diced tomatoes.


This recipe is full of flavor and very refreshing on a hot summer’s day it goes great with salad and cheese mash potatoes. After
a long day of bailing hay my family and I love to end the day with this meal and a fresh ginger cake topped with whipped cream.


The best thing about meat loaf is with a little imagination Monday night meat loaf can be a new adventure every week of the year. Stay away from the old 50’s catsup topping and your family will become a fan all over again.
