BACON-&-EGG PITAS

Make these protein-rich sandwiches the night before, then reheat them in the microwave.

4 lg. eggs

1-1/2 c. fat-free milk

1 tbsp. all-purpose flour

1/4 tsp. salt

1/8 tsp. pepper

1 c. shredded reduced-fat cheddar cheese

3/4 c. chopped broccoli

4 slices pkgd. ready-to-serve cooked bacon, chopped

4 whole-wheat pita breads, cut in 1/2

1.  Heat oven to 350 deg. F.  Lightly coat a 2-qt. sq. baking dish w/ nonstick cooking spray; set aside.

2.  In a med. bowl, whisk together eggs, milk, flour, salt, & pepper til smooth.  Stir in cheese, broccoli, & bacon.  Pour mixture into prepared pan.

3.  Bake for 30-35 min. or til the center is just set.  Remove & cool slightly, about 10 min.  Cut into triangles & serve in pita halves, or refrigerate, covered & reheat the next morning in the microwave.  Makes 8 servings.
