GRILLED BEEF EYE ROUND STEAKS W/ GARLIC-YOGURT MARINADE

Prep & Cook Time:  35 min.  Makes:  4 servings  Marinating Time:  6 hrs. or overnight

Beef Preparation:

4 beef eye round steaks, cut 1" thick (about 8 oz. ea.)

Salt

Marinade & Sauce:

1 c. plain yogurt

1/4 c. chopped fresh parsley

2 tbsp. lemon juice

1 tbsp. sweet paprika

1 tsp. salt

1/4 c. mayonnaise

1.  Combine all marinade/sauce ingredients, except mayonnaise, in sm. bowl; mix well.  Divide mixture in 1/2.  Place beef steaks & 1/2 mixture in food-safe plastic bag; turn steaks to coat.  Close bag securely & marinate in refrigerator 6 hrs. or as long as overnight.  Stir mayonnaise into remaining 1/2 mixture for sauce; cover & refrigerate.

2.  Remove steaks from marinade; discard marinade.  Place steaks on grid over med. ash-covered coals.  Grill, uncovered, 19-23 min. for med. rare doneness, turning occasionally.  (Do not overcook.)  Season steaks w/ salt, as desired.  Serve w/ sauce.
