BLUEBERRY SAUCE

Prep:  15 min.  Cool:  1 hr.

2/3 c. sugar

1 tsp. cornstarch

1/4 tsp. salt

1/3 c. water

1 tsp. lemon juice

4 c. fresh or frozen blueberries

1.  In saucepan combine sugar, cornstarch & salt; stir in water & lemon juice & mix well.  Add blueberries.  Cook over  med. heat, stirring often, til mixture is slightly thickened & bubbly.  Cook & stir 2 min. more.

2.  Transfer to bowl; cool.  Serve @ room temperature.  Or cover & refrigerate 1 hr. or up to 2 days.  If chilled, let stand @ room temperature 30 min. before serving.

Makes 3 c.

Ea. 1/4 c. serving:  72 cal.; 0 g. fat; 0 mg. chol.; 49 mg. sodium; 18 g. carbs.; 1 g. fiber; 0 g. pro.  Daily Values:  1% vit. A; 8% vit. C; 0% calcium; 1% iron.
