Total time:  15 min.  Makes:  2-3/4 c.

RECIPE TIP:  This also makes a great topping for grilled chicken or fish.

2 med. ripe avocados, cut into 1/2" chunks

2 plum tomatoes, seeded & coarsely chopped

1 jalapeno chile, chopped

1/3 c. chopped sweet onion

1/4 c. loosely packed fresh cilantro leaves, chopped

2 tbsp. fresh lime juice

Kosher salt

Jicama & carrot slices for serving (optional)

In bowl, combine avocadoes, tomatoes, jalapeno, onion, cilantro, lime juice, & 1/2 tsp. salt.  Store covered in the refrigerator up to 4 hrs. Serve w/ jicama & carrot slices if you like.
