PEACH-&-PLUM ALMOND CAKE

Prep time:  25 min.  Cooking time:  1 hr. & 5 min.

1-1/2 c. all-purpose flour

1-1/2 tsp. baking powder

1/4 tsp. salt

3/4 c. (1-1/2 stick) unsalted butter, softened

3 lg. eggs

1/2 tsp. grated lemon zest

1/4 tsp. almond extract

2 plums, pitted, cut into 3/4" thick slices

2 peaches, pitted, cut into 3/4" thick slices

Confectioners' sugar, for dusting

1.  Heat oven to 350 deg. F.  Grease a 9" springform pan w/ cooking spray.  Whisk flour, baking powder, & salt in a sm. bowl.

2.  In a lg. bowl, w/ an electric mixer on med. speed, beat butter & 1 c. of the sugar til fluffy.  Beat in eggs, 1 @ a time, til well blended.  Beat in lemon zest & almond extract.  W/ mixer on low speed, beat in flour mixture just til blended.  Scrape into prepared pan & spread evenly.  Starting @ edge, arrange plum & peach slices alternately in a circular pattern; repeat in center.  Sprinkle top w/ remaining 2 tbsp. granulated sugar.

3.  Bake 1 hr. & 5 min., or til a toothpick inserted in center of cake comes out clean.  Let cool completely on a wire rack.  Remove pan side & dust top lightly w/ confectioners' sugar.

Makes 8 servings.
