Cookery Hint

Cookery Hint

A Chapter by Vidya

FRYING: If you put a little salt in the frying pan before you pour in the grease, the hot grease will not splutter so much.
FRUIT COOKING: If you grease the pan slightly before putting in the fruit you want to cook, it will not stick or burn.
CRACKED EGGS: When you have 3 cracked eggs to boil, add a little vinegar to the water.
This will prevent the white from coming out.
PASTRY FILLING: Before filling a pie crust with a juicy or liquid filling, brush the crust with a slightly beaten egg white. This keeps the liquid from soaking into the pastry.
CURRIES: Do not use curry powder, but only freshly fried and ground masala, which can be kept in bottles for a week or so.
