A Portrait of Her Making Salad Nicoise

I actually tried making this salad before, the dressing that normally goes with it and everything. It's a French dish.

"

A Portrait of Her Making Salad Niçoise

Her eyes rove
the pallet of assorted vegetables
niçoise olives
tomatoes
and green beans

watered down by ironized
liquid hydrogen dioxide.

She mixes them into a bowl
of fresh cut lettuce,
blends them with her spatula.
Onions on the side
because not everyone enjoys
onions. She’s careful
so that it doesn’t sting her own eyes-
take away from her own masterpiece.

It’s all to be drenched in
dressing any way,
but it doesn’t stop there.
She must personalize it,
give the popular dressing
her own kick.

Nearly ruins it all with one
too many douses of oil and
vinegar. It has a peculiar taste.
She licks her lips,
finding the tangy smell
tolerable.

Someone would find this a masterpiece.
