Usually, ice cream is served at a cold temperature that holds it together and makes it smooth, light-textured and creamy.

Gelato " Whereas in Gelato, ice cream starts with a same custard base but has a high proportion of milk and a low proportion of cream and eggs or no eggs at all. It is stirred around at slow rate, incorporating less air and leaving the gelato more thicker than ice cream. Gelato is served at warmer temperature than ice cream, because of which its texture stays silkier and softer. It has low percentage of fat as compared to ice cream and the main flavor ingredient glow.
