Ode to Montreal

I’m holding onto the lingering flavour

This liquid designed, this legacy of bovine

Brown, gooey goodness to savour

Oh sweet cattle, of my favour is thine


Merciful in sweetness, the milky cheese,

Of the curds you so graciously gifted

The epitome of gooey release

Apart and within, the hot strings are lifted


The clash of buttery and chalky!

But juicy one and all the same,

Sleep lost over spuds shaped stalky!

So rich, like Mansa Musa’s wealth and name


And, like the African King himself,

You generously grant glorious, heaven of cream

--and fried! and piquant! and roasted!

Potatoes only one could dream


Then, like an old lady at home knitting,

Are these pieces spliced at the seams

Do I devour your delicate togetherness in one sitting? and--

Do so you make, an awe-wondrous meal supreme!
